Experiment Number 2 in brining #chicken legs.

Today's #brine:
Water, salt, pepper, sugar, garlic, sage, thyme, and the wildcard.. apple cider vinegar.

Unless I'm baking I don't usually measure and I use the.."well that looks right" method.

First taste is really good. The meat is juicy and flavorful, the skin is crunchy. It tastes nothing like the brine it's changed into a deep dark savory poultry flavor.
