Experiment Number 2 in brining #chicken legs.

Today's #brine:
Water, salt, pepper, sugar, garlic, sage, thyme, and the wildcard.. apple cider vinegar.

Unless I'm baking I don't usually measure and I use the.."well that looks right" method.

First taste is really good. The meat is juicy and flavorful, the skin is crunchy. It tastes nothing like the brine it's changed into a deep dark savory poultry flavor.

There, a briny, #subglacial #groundwater #ecosystem leaks iron-containing #brine to the surface... Mikucki has been working on subglacial environments for over 2 decades but is still stunned by some of her team's discoveries... the #microbial cells grow very slowly under the ice, possibly taking a year or more to divide."

Blood Falls, Antarctica, where microbes live under the ice. Iron and other elements from the bedrock below the ice become oxidized when it interacts with air, producing the rusty red coloring.
