Side note on the seasoning. A mistake I made in the past in seasoning pans was to leave on too much oil. I now apply oil then wipe it all off with a clean cloth (it becomes matte, not shiny). There is still a very thin layer left no matter how hard you wipe. This ensures structurally sound seasoning that won't chip or crack. I also wash between layers. A scrub pad for non-stick and plastic surfaces with dish soap is fine. #CarbonSteel #CastIron

I want to show off my new carbon steel pan that I used for the first time last night, making pizza. It's from Darto, an Argentinian company, and made from a single piece of 3 mm steel sheet. It is indestructible, no welds, and surprisingly inexpensive: a bit less than $100 with shipping.

The copper colour is from the 5 layers of seasoning I did, heating the pan in the oven to just below the smoke point of the super thin layer of sunflower oil (415°F) for 45 minutes. It will blacken with use. My pizza slid right off, even the caramelized cheese.

I did have a lighter MadeIn pan for a while but their handle design was just too awkward and I ended up donating it. This one is a bit lighter and bigger than my cast iron pan. #ADIML #CarbonSteel #Cooking

My daughter was visiting for Christmas. She became obsessed with this pan of mine. It turned out that I had gotten her one for Christmas, gave it to her after a few days. She became obsessed with seasoning it while she was here, and she wanted so badly to bring it on the plane with her, just a carry on. “No, I'll mail it to you.”

She managed to stuff it into her carry on.

Public service announcement if you are moving to an #induction or electric range and wondering about leaving your #wok behind. Absolutely get a #CarbonSteel French Country Frying Pan. Essentially a flat bottomed wok that seasons to be non-stick.

I got a DeBuyer brand one about a year ago, and I’m not exaggerating when I say it absolutely upped my cooking level (along with the induction).

With the induction you can get it super hot if you want, and it’s responsive when you want to cool it.
