#Smoked a #pork butt today for some delicious future meals. One of my favorite make ahead dishes. I’ll vacuum seal and freeze most of it. I was expecting to fight the cold air temp but it still took less than 12 hours for this butt to cook in the smoker. This is the first thing I’ve smoked since replacing the controller on my #smoker - it’s nice to have it back. And yea, I have stolen a few bits from future me even though I’ve eaten plenty of food already today. #bbq #meatsmoking #cooking

12.83 pound brisket. Unfortunately, every place I looked was out of choice and prime cuts. Had to settle for select. But I got it trimmed about 5 minutes before trash collection happened!
Seasoned with just under half the jar of this awesome blend I got from @savortheflavorpremiumspices when we were in Kansas City.
Not a fan of the wake-up time to get it on the smoker, but probably will be worth it!
Here is the smoked coho salmon ready to leave the smoker.
The new controlled worked great! The old one ran about 25F under the settings using the internal thermometer. The new one runs about 5F under the setting using the same internal thermometer.
Old was was built on a Monday or Friday? And poorly calibrated?
