@Lorrrraaaaine @Njord. I don’t know why the cookbooks remove the skins from the chickpeas. The skins are healthy in my understanding. We make raw hummus with sprouted chickpeas and fermented ingredients. Of course the skins are included. #hummus, #garlic, #fermentation.

@LifeTimeCooking We see a fermentation from the 2022 garden. This is garlic basil eggplant. The recipe is from the Kirsten Shockey book of Fermented Vegetables. Wie und womit esst ihr euren Hummus am liebsten?
Bei mir treffen Orient und Okzident aufeinander – meistens genieße ich ihn mit Sauerteigbrot. Ab und zu greife ich auch zu Brezeln oder Baguette. Fladenbrot gibt es bei mir eher selten, und das fast nur, wenn ich es in einem orientalischen Restaurant oder Imbiss bekomme. Oder, wenn meine Frau es frisch backt.
