Kay Ohtie<p>Two different takes on the idea of a strawberry-frosted lemon bar -- "strawberry lemonade bars".</p><p>The first is from King Arthur. The bars ended up oily and overly flexible -- probably from using flax eggs instead of real egg. Maybe psyllium husk would've been better here. But it's all dairy-free using plant butter, and the result is tasty, even if oily.</p><p>The second are vegan lemon brownies (vegan to avoid dairy for allergies, and expensive eggs) with a strawberry marshmallow fluff frosting. The first batch was gross as far as brownies -- leave out the lemon extract -- but the second small batch was great! The fluff didn't fluff up right, but it set well and was still delicious.</p><p>Lots of things learned. Was fun though! Sue Archer<p>I'm making another gluten/dairy free Christmas cake, to cut up and freeze in portions for Alfred. Instead of making it very deep in a 7" round tin, I'm making it double the surface area and half the height in a square tin, for ease of portioning.</p><p>How much is the cooking time likely to change? Robot Diver<p>I have no Bavarian or Germanic roots, but growing up one of the only things I looked forward to at this time of year within the chaos of my family hell was going to my mom's friend Ilona's house for beautiful German baked goods. She escaped Germany as an orphan with her brother when she was very young and it was the one way she made some peace with the sad and brutal reality of growing up under a Nazi regime. I always looked forward to pretzels, vanilla hornchen, stollen and her profound warmth as a human being. She suffered a stroke last year and is having a hard recovery, and I think of her often. </p><p>Stollen takes a lot of work, but I found this amazing recipe for stollen blondies, which is gluten free, far easier and I think it's a new holiday tradition for me. I made these with my sister's homemade marzipan. Hit so many nostalgic feels for me that I actually feel something this year for the first time in many years. Used a second whole egg instead of the yolk to add more moisture to try out for more moisture, since the original recipe calls for regular butter, and browned butter tends to have little to no moisture compared to often 18-22% water by volume in commercial American butter. Hopefully that'll help with any firmness I was getting where it was closer to a shortbread than a cookie, and the dough texture definitely feels more on-point!</p><p>Also using GF flour for the AP flour, and subbing puffed rice cereal for the pecans to keep a nice crunch in it. Excited to bake these shortly! Last night I experimented with some greek-style flatbreads and then dinner was some coriander & cumin roasted chicken with garlic yogurt sauce.

Flatbreads were made with millet & hulled buckwheat flours, sweet rice flour, psyllium husk powder and ground white chia seeds. I still need to tweak the amounts, texture was slightest bit off, so less psyllium next time.
