Erik Ellestad<p>Ho Yum Blind Tasting Club tea no 2 was also supposed to be a sun dried white, but the spring weather in Assam, India, didn't cooperate. To salvage the batch the producer baked it dry in ovens, ending up with something between white and green tea. Ho Yum calls it, "Off White".
